Were the Fantastic Four able to best Galactus with no issues or damage sustained, it would arguably undermine both the intimidation factor of the vastly powerful Marvel character, and the stakes at hand. This is doubly true given it’s a criticism MCU viewers already had regarding Kang in Ant-Man & The Wasp: Quantumania, with Ant-Man defeating Kang and undermining his intimidation factor as the then-antagonist of Avengers 5, especially since a common fan theory beforehand was that someone would have to sacrifice themselves in order to take such a powerful Marvel villain out.

While the MCU may have had plans to make Kang’s various variants more imposing following the film, the shift to a Doctor Doom focused Avengers 5 means the anticlimactic defeat of a major Marvel villain in Quantumania doesn’t have the same kind of potential to be turned around, and thus the franchise needs to avoid its other major players having similarly underwhelming defeats.
